Meet César

Hola, soy César.

Vivo en Oviedo, Asturias, Spain.

He sido Chef durante 30 años y siempre he sido un apasionado del mundo de las especias. 

Durante mi dilatada carrera, he tenido la suerte de probar y conocer muchas de éstas. Tanto sabor, tantos aromas y colores me producen una atracción febril.

Conocer y poder utilizar la amplia variedad de especias que hay alrededor del mundo es un muy ambicioso reto, no diría imposible, pero sí muy, muy exigente.

Sería un sueño poder acceder al conocimiento que va aparejado al uso de esas especias, empleadas durante cientos de años, sentirte transportado a ese lugar en concreto, sólo con olerlas, sólo con paladear su sabor.

Éste será un espacio en el que no pretendo ni mucho menos ese objetivo. Si bien ese objetivo va más allá del alcance de este espacio.

Pero si tengo la intención de investigar, de probar, de experimentar con todas las especias que caigan en mis manos, de explorar cualquier tipo de sazón, por extraña que parezca, con el fin de ampliar mis conocimientos sobre este apasionante mundo, para poder acceder a una pequeña parte de esta magia y por qué no, beber un sorbito de esa fuente de sabiduría.

Hello I'm Cesar.

I live in Oviedo, Asturias, Spain.

I've been a Chef for 30 years and I've always been passionate about the world of spices. 

Thanks to my wide career I've so lucky as to try and get to know many of them. 

So much flavor, so many aromas and colours have a feverish attraction for me.

Knowing and being able to use the wide variety of spices that exist around the world is a very ambitious challenge. I would not say impossible, but very, very demanding indeed.

It would be a dream to be able to access the knowledge that goes hand in hand with using those spices, which have been around for hundreds of years, to feel transported to that particular place, just by smelling them, just by savouring their flavour. This will be a space in which I do not intend that objective at all. Such a goal is beyond the scope of this space.

But I've got the intention to investigate, to try, to experiment with all the spices that fall into my hands, and to explore any type of seasoning, no matter how strange as it may seem, in order to expand my knowledge about this exciting world, to be able to access to a small part of this magic and why not, drink a sip of that fountain of wisdom.
